Domaine Hervé de Lavoreille 's red and white wines are achieved in the purest tradition of winemaking in Burgundy through Manual hervesting : in order to respect the fruit, allow them to sort the grapes and keep the ripest and soundest berries. Keeping to Traditional wine-making by fermentation of the distemmed grapes, in temperature
controlled fermentors, with daily punching of the cap and pumping over,
during 10 to 20 days, according to the quality of the vintages.
Oak-barrel ageing during 12 to 18 months, according to the vintage,
with some percentage of new barrels, all done in an underground XVth
century maturing cellar, preventing the wines from temperature and
climate variations.
Travel tips: Wine cellars and vineyards in Burgundy are not always accessible to the public. Renting a car is the best way to meet independent, family winegrowers typical to Burgundy. You will find that having a vehicle would be ideal as you will end up buying cartons of wine at vineyards' prices (usually unavailable outside France).
Burgundy’s Côte de Beaune has some of the world-famous villages such as Meursault, Santenay, Puligny-Montrachet, Chassagne-Montrachet, Savigny-Les-Beaune, Nuits St Georges, Vosne Romanée and Pommard. I hope to visit all of them =)
