After some research online, Cassis has some of the top places to have Bouillabaisse. The portion is really huge for one person. If you love seafood, you won't have any problem finishing it alone.

I would say Chez Gilbert Bouillabaisse has a little hint burnt bitter after taste. Its one of the character of the soup here. I prefer it without the bitterness. Overall the restaurant is legit and has nothing to hide. They present the fishes whole that was used in the bouillabaisse and deboned the fishes right in front of your very eyes.
